Healthy Oats Puttu

Ingredients

Crushed Oats -1cup +1tbsp Water -7 tbsp Salt- Grated coconut 3 tbsp +

Method

Take two cups of oats..Sieve and keep aside ..Then take a blender and just whip into coarse powder ..In a bowl add water ,salt and grated coconut(2tbsp),mix well..Now to that slowly add oats powder and mix ..Then you will get a hard dough type mix ..Add this to the jar and into that add 1 tbsp of oats powder or one table of atta ..Then just whip it ..Now you will get soft puttu mix ..To that again add 1 tbsp of coconut and mix..Check the salt and adjust .. Boil water in a cooker ,in the puttu mould at first add 1tsp of grated coconut and then fill the mould with puttu mix..Then place the mould in the cooker nozzle and and steam for 3-4 minutes or until the puttu is cooked well ..A very nice aroma will spread when the puttu is perfectly cooked ..So the very healthy but easy and tasty puttu is ready to serve .. Serve with curries ,banana etc ..

Dry Ginger -2 small pieces Pepper-3/4 tsp Cumin seeds-1/4 tsp Basil leaves -1/4 tsp Palm Sugar/Jaggery- Coffee powder -1/2 tsp Water -2 1/2 cup Method
In a saucepan add water,jaggery,cumin powder,pepper powder ,coffee powder ,basil ,chukku podi and mix well..Boil this for 5 to 10 minutes in medium flame..Close the pan for 5 minutes and then strain the coffee ..Our hot dry ginger coffee is ready to serve..

White Rice -2cup Egg - 1 Maida -2 tbsp Sugar-7-8 tbsp Salt- Coconut Milk-1 3/4 cup to 2 cups Sesame seeds- 1 tsp Method Soak rice for 2 hours .Wash well and drain for another 2 hours in a strainer .Now make fine powder ..To that powder add maida ..Beat egg and sugar .Add this mix to the rice flour maida mix .Mix well .Now add coconut milk and make smooth batter ..Rest for 30 minutes .Now heat oil ,dip the mould in hot oil ..When the oil is hot dip 3/4th portion of the mould in the batter and dip in the oil and the achappam will release its own..Flip after one minute..So like this way make achappam and enjoy ...

Ingredients Tomato-3big Kudampuli-1small Small Onion-4 Onion-1/2 Green chilli-1 Ginger-1 small piece Curry leaves Salt- Sugar(opt) Chilli Powder-1/4 tsp Kashmiri Chilli Powder-1 tsp Turmeric Powder-1/4 tsp Thick coconut milk-1 cup Coconut Oil-1 tsp Water-1 1/2 cup Seasoning Small Onion-5 Curry leaves - Coconut Oil-2 tbsp Method
In a kadai mix everything listed above except coconut milk. Close the kadai and cook for 10 minutes in medium flame. Then add coconut milk and season the curry.

Method

Wash and drain poha (if its thick)Heat oil in a kadai splutters mustard seeds, urad dal , peanuts and curry leaves ..Cook potato and keep aside.Then add onion, green chilli and saute.Then add carrot and cook for 2 minutes.Then add turmeric powder and chilli powder. Saute well.Then add cooked potato and mix.Then add poha and mix well.. Then check the salt ..Finally, add coriander leaves and lemon juice.

Brinjal -2 Green Chilli -3 Onion- 2 Garlic-6 Ginger - small Piece Chilli Powder-1tsp Turmeric Powder -1/4tsp Tomato-2 Salt- Coriander Leaves - Oil- 1 1/2tbsp

Method

Wash and dry the brinjal .Make slits and roast them .Heat oil kadai in a kadai ,add finely chopped onions along with salt .Saute for 5 minutes .Then add ginger ,garlic ,green chilli and saute till light golden brown.Add powders and saute for 2 minutes in low flame by stirring continuously .Then add tomato ,close and cook .Meanwhile peel the brinjal and mash them well ..To the tomato gravy add brinjal and mix well ..Cook for another 5 minutes in medium flame ..Check the taste . Finally add coriander leaves and garnish .So the tasty Baingan Bharta is ready to serve..

Ingredients

Raw Rice/White rice-2cups
Jaggery-320 to 350gms
Salt-
Cardamom Powder-1/4tsp
Sesame Seeds-1/2tsp
Water-1/2cup
Ghee-1tsp
Oil -for frying

Method

Wash and soak for 3-4 hours ..Then drain and keep aside .Melt jaggery and strain.. After cooling down grind along with rice in two three batches .The consistency should be loose than idli batter ..Check the taste ..Add salt,cardamom powder ,sesame seeds and ghee .Mix well .. and keep the batter overnight or 12 hours . Then take out the batter and check the consistency ,If u feel its to thick u can add 1-2 tbsp of water and mix.Heat oil and when its medium hot pour one small ladle of batter and fry till golden colour ..Enjoy our authentic Neyyappam..

Method

Roast semolina and keep aside .Heat ghee and oil ..To that add mustard seeds and urad dal..Then add cashew d raisins ..Then add ginger, green chilli and onion and saute till translucent ..Now add turmeric powder and saute till raw smell goes .. Add hot water and salt ,boil well..Now add rava and mix evenly and close for 2 minutes in low flame by closing the kadai ..Switch off the gas ..Then open and mix well and again close and keep for 2 more minutes ..So our tasty easy Rava kichadi is ready to serve ..

Besan flour /Chickpeas Powder -1 cup Water-1/2 cup plus 2 tbsp Baking Soda-1 pinch Salt-one pinch Yellow colour-2 drops Sugar-1 cup Water-3/4 cup Salt-one pinch Cardamom powder-1/2 tsp Yellow colour-2 drops Sugar Candy-few Cashew nuts-6 Raisins-10

Method

In a blender add besan ,baking soda and salt just whip..Then add water and colour.
Make a fine batter ..In a saucepan add water ,sugar and salt and keep aside..Heat oil in a kadai and heat ..When oil is medium hot through a ladoo strainer add batter and shake slowly .. Fry the boondi till cripsy .. Then remove from the oil and keep in the strainer .. Make boondi same way from rest of the batter ..Then make sugar syrup by heating in high heat for 8 minutes .. Then add cardamom powder and colour ..Now crush 3/4th of the boondi ..Add that in a bowl along with the 1/4 th part of the full type boondi ..Now pour the hot sugar syrup and mix well ..Then add roasted cashews and raisins along with ghee to the boondi mix..Then add sugar candy..Mix well ,let the boondi absorb the sugar syrup ..Then wet your palm and make small balls out of the boondi mix ..So the tasty easy boondi ladoo is ready to serve ..

Ingredients

Atta-1 1/4 cups Oil - Water Salt-to taste Water- Filling  Potato-2 big Green Chilli-4 Coriander leaves  -handful Grated Ginger-1tsp Big onion-one small Cumin powder-1/4tsp Chilli Powder-1/4 tsp Garam Masala-2 pinch Kashmiri chilli powder-1/4tsp Dry mango powder-one pinch |(opt) Turmeric Powder- 1/4 tsp

Method

Dough Mix water ,salt, and oil ..mix well ..then add flour and mix together .., knead well to make a soft dough ..Keep the dough aside for 15 minutes in a tight container Filling Cook the potatoes by adding salt and 2 cup of water . .If u are cooking in cooker then 1 whistle is enough ..Once cooked remove from the fire and open the cooker and let them cool down.Don't pour water on it .After the potatoes are cold enough to handle, peel the skin off and mash them well. Heat oil in a kadai,add finely chopped onion ,green chilli and ginger .saute till it transparent.. Then lower the flame and add all powders,saute till raw smell goes ..Then add mashed potato and salt ,and mix well .. Cook till u get a dry mixture (moisture free)Then add finely chopped Coriander leaves ..mix well..check the taste and adjust.And allow this mix to cool down Making Parathas Divide the dough and potato filling in to equal parts.Roll the dough into small circles and place the potato balls in the center..Seal by pulling the edges of the rolled dough together to make a ball.Let the ball to settle for 2 minutes before rolling them ..Now roll the balls .Lightly press the ball on the sealed side and keep it on the top side when rolling .Roll the balls into medium size ..when u feel sticking in the rolling surface then lightly sprinkle the atta on both side of the semi rolled paratha .Heat a pan on high flame .place the paratha on the pan.after 1 minute flip the paratha over ..Then after 1 minute turn to the other side .You should see some golden brown spots on the top side.Then spread 1 tsp of oil or ghee on the paratha ..Again flip the paratha and lightly press the puffed areas with a spatula.Flip again do the same .When golden colour on both sides remove from the fire ..so ur all time favourite aloo paratha is ready to serve .…

Rava Idli

Soft Rava Idli

Ingredients


Rava -1 1/2 cup
Curd-1 cup
Baking soda-1tsp
Salt
Sesame oil-2tbsp
Mustard seeds-1/4tsp
Grated carrot-1/2 cup
Green chilli-1 chopped
Coriander leaves- few chopped
Urad dal-1/4 tsp
Chana dal-1tsp
Hing/kayam podi-less than 1/4 tsp

Method


In a kadai heat oil splutter mustard seeds, urad dal and then add chana dal and roast in medium flame.Then add grated carrot, green chilli , leaves and saute till raw smell goesNow add rava and roast for 2-3 minutes.In a vessel add beaten curd along with roasted rava mix.Mix well.Then add salt and 1 cup of water .Soak for 20 minutes.Then check the water consistency. I added 1/4 glass more water .. So you add accordingly.Heat the steamer and get ready.So just before making idli .Add baking soda and mix.Then immediately pour batter in the mould.Fill 3/4 th portion ortherwise it will spill. Steam for 10 minutes or until cooked well.Our soft rava idli is ready to serve..
