ONION VADA

Ingredients
Big Onion-1 small All Purpose Flour -1 cup Green chilli-2-3 Ginger-1tsp Curry leaves -1 string Baking Soda-1/4 tsp Salt- Water-1/2 cup Oil-1 tsp Oil for Frying
Method
Sieve maida ,baking soda and salt..Keep aside .In a bowl add chopped onion ,ginger, green chilli,curry leaves .Mix well. Then add water and mix.Now add maida mixture and knead to a soft dough .Finally sprinkle one tsp of oil and keep in a tight container for 2 hours ..Now divide the dough into small small balls ..Apply oil or water to the palm of your hands and shape dough into the shape of uzhunnu vada (press each balls between your palms and make a round shape and make whole in the center using finger .Heat oil in a kadai .Deep fry the vada in hot oil.When it become golden brown and crisp remove from the oil and drain .Serve with chutney...

Vegetable Kothu Chapati

Ingredients
Chapati -7 Onion -1/2 Green chilli -2-3 Curry leaves - Coriander leaves Vegetables - Salt- Pepper powder - Tomato -1/2 Gravy- Oil -2-3 tbsp Method Heat oil in a kadai ,add curry leaves , onion ,green chilli and salt ..saute for few minutes till translucent ..Then add to vegetables and saute ..Now add tomato and cook for
2 minutes.Then add finely chopped chapathi and mix ..Now add gravy and mix well ..check the salt and adjust ..Add pepper and coriander leaves and mix .. Then transfer to a plate and more onion,tomato,curry leaves ..Now using a glass chop finely.. So the tasty kothu chapati is ready to serve ..

Perfect Kalathappam

Ingredients 
Rice-1cup,
Preferably Kaima Rice (jeerakasala ) or you can use white rice ( Cup =240 ml )
Jaggery -250 gm -300 gm Cardamom-1 Cumin seeds-1 pinch Cooked rice-1 tbsp(any type of rice) Small onion-3 Finely chopped Coconut -2 tbsp Salt-one pinch  Water -1 1/2 cup Coconut Oil-4 tbsp Baking Soda-2 pinch  Method  Soak rice for minimum for 4 hours.Wash well and drain .Then take mixie jar , add rice , cooked rice ,cumin seeds and cardamom (only seeds ) along with 1/2 cup of water.Grind to a fine paste.Then add 1/2 cup more water and blend well .. (we have to grind the rice in a small quantity of water first, otherwise we cant grind the rice so nicely)Pour this finely ground batter to a vessel and keep aside.In a saucepan add jaggery and pour 1/2 cup of water and melt in medium flame, stirring occasionally.Then heat 2 tbsp of  coconut oil and roast small onions and coconut pieces in to golden color .Keep aside ,dont through the coconut oil we used for frying these .By this time the jaggery will be ready ,using a strainer, strain it.Add this hot jaggery mix to the rice batter .Pour with one hand and mix with another hand continuously to avoid lumps.Now add salt and baking soda and mix well .. (This batter is very loose ,when i measured this batter I got 3 cups of batter )Now take a cooker,I used 5 L aluminium cooker .Heat the cooker in high flame. Add leftover coconut oil along with another 2 tbsp of coconut oil. Rotate the oil in the sides of the cooker, When the oil is piping hot (the flame should be in   high heat )Pour this slightly hot jaggery rice flour mix to the hot cooker, add fried   coconut and onion in the top .Close the cooker ,remove the weight ,and cook for exactly 1 1/2 minute in high flame .Then after 1 1/2 minute cook in low flame , exactly for 15 minutes . After 15 minutes switch off the flame and keep the cooker in a cool place .Open the cooker after another 15 minutes.Check the centre of the kalathappam using a tooth pick or fork ..If it comes out clean, that means the kalathappam is cooked well. So allow the kalathappam to cool completely.  Then take out from the cooker .Cut into the desired shapes using a sharp knife .You can see many bee holes like shapes inside the appam .So enjoy the soft and tasty kalathappam..

Easy Nadan Sambar

Ingredients
Chana Dal - 1/2 a cup Turmeric powder - 1/4 tsp Onion - 1 small or 1/2 of 1 medium Asafoetida -1 small piece Carrot - 1/2 of one Pumpkin - 4 to 5 pieces Cucumber - 4 to 5 pieces Cluster beans - 4 Yam - 4 to 5 pieces Drumstick - 1 Tamarind - lemon size Shallots -15 Garlic-1 clove Green chilli - 2 Tomato - 1 medium Ladies finger - 4 Curry leaves - 1 string Sambar powder - 2 1/2 tbsp Chilli powder - 1/2 tsp Coriander powder -1 tsp Asafoetida powder - 2 pinch Fenugreek powder - 2 pinch Coconut oil-1 tbsp Salt Water For seasoning
Mustard seeds -1/4 tsp Fenugreek seeds - 2 pinch Dry red chilli - 3 to 4 Curry leaves - 1 string Sambar powder- 1/2 tbsp Method Wash and soak the tamarind in water.Wash dal and pressure cook by adding enough water ,turmeric powder,asafoetida,salt and all the vegetables except lady's finger,tomato and shallots.Cook for 1 whistle in medium flame.Open the cooker by releasing the preasure manually.Do not wait for the pressure to settle down automatically. Meanwhile heat 1 tsp of coconut oil and saute shallots and garlic till it become transparent.Reduce the flame and add turmeric powder,chilli powder,coriander powder.When the raw smell goes,add 2 tbsp of sambar powder.Keep the remaining 1/2 tbsp aside.Saute till the raw smell goes.Add fenugreek powder and asafoetida powder.Add plenty of curry leaves.Keep them aside.Open the cooker after releasing the pressure and add tamarind water,roasted onion mix,tomato,ladies finger,green chilli and jaggery.Add enough hot water,if required.Allow to boil for about 10 minutes in medium flame .Check the salt and sourness .. It should reduce its quantity by 1/4th of the total quantity.Now heat coconut oil ,add dry red chillies,splutter mustard seeds,fenugreek seeds,curry leaves one by one and finally the remaining 1/2 tbsp of sambar powder.Turn off the gas and add the seasoning into the sambar.Mix well and close the cooker for few minutes.Do not put the weight on the lid.Then open the cooker.Our tasty easy sambar is ready to serve...

Special Gothambu Dosa

Ingredients
Wheat flour-1 cup Water - 1 1/4 cup (room temperature ) Salt- Baking Powder-1 tsp Method Mix salt and baking powder together with wheat flour .. Add water and mix gently. Then heat a nonstick thawa to medium hot, pour one ladle of batter and when the wholes started to come to reduce the heat to low and close the pan and cook for few seconds. No need to flip the dosa ..Our special Gothambu

Easy Tomato Chutney

Ingredients
Tomato-4 Sambar Powder-1 1/2 tsp Salt- Sugar-1 tsp Green chilli-2 Turmeric Powder-2 pinch Asafoetida Powder -1/4 tsp Sesame Oil-2 tbsp Mustard Seeds-1/4 tsp Curry leaves- Urad Dal-1/4 tsp Method In a blender add tomato ,salt ,turmeric and sambar powder,grind well..Heat oil in a kadai ,splutter mustard seeds,urad dal ,followed by adding curry leaves and green chilli .Saute well.Add asafoetida powder and mix.Now add Tomato puree along with sugar ..Allow to cook for 10-15 minutes or until its raw smell goes ..Check the taste and adjust..So the yummy chutney is ready ..

Soya Chunks Dry Roast

Ingredients
Soya Chunks -100 gm Onion-4 medium Green chilli-2 Curry leaves- Kashmiri chilli powder-1 tsp Chilli powder-1/2 tsp Coriander Powder-1 tsp Turmeric powder-1/4 tsp Garam Masala-1/2 tsp Crushed pepper-1/2 tsp Ginger Garlic crushed-1 tbsp Coconut Oil-3 tbsp Tomato-1 Salt- Water-1/4 cup Method
Soak soya in hot water for 20 minutes.Then wash well two three times .Squeeze the water and cook in a cooker along with turmeric powder ,chilli powder ,water and salt .One whistle ..Then open the cooker and keep aside ..Now heat a kadai add coconut oil .To that add ginger garlic along with curry leaves ..Saute for 2 minutes then add onions and salt..Saute till the onion become brown shade.Now add all powders and saute till the raw smell goes ..Now add tomato and mix..Close the kadai and cook ..Then add cooked soya and mix well .. Add crushed pepper and lots of curry leaves..Roast till all the water goes ..Now tasty soya dry fry is ready to serve ..

Beetroot Thoran

Ingredients
Beetroot-5 Small Onion-10 Crushed chilli-1 1/2tsp Curry Leaves- Salt- Coconut Oil-1 1/2 tbsp Grated Coconut-2-3 tbsp
Method Wash and peel beetroot and cut in to half and grate .. Cook beetroot in a cooker along with water and salt …mostly 3 whistle is enough.In a bowl add grated beetroot along with salt and water .Close the bowl with a tight lid and cook for 15 minutes and then open and stir well ..Cook for another 5 minutes with out closing ..Open the cooker after 5 minutes.. . In between crush small onion and dry chilli flakes together .. Heat oil in a pan ,sauté onion -chilli mix along with curry leaves..When the raw smell goes add grated coconut and sauté for 2 minutes ..Then add cooked beetroot and sauté until the mix becomes dry ..Check the salt ..Our tasty beetroot thoran is ready to serve..

Easy Kadala Curry

Ingredients
Brown chana -1 cup Onion-2 small Tomato-1 Chilli powder-3/4 tsp Garam Masala-1/4 tsp Turmeric Powder-1/4 tsp Coriander Powder-1/2 tsp Water- Salt- Small Onion- Coconut Oil Garlic-(opt) Method Soak kadala overnight ,wash well and drain .Take a cooker add kadala along with all powders ,onion,tomato,salt and water .Cook for 6 whistles in medium flame .Open the cooker after the pressure goes .Now if you want gravy then boil well for 10 minutes and then season with small onions and
curry leaves.Our tasty kadala curry is ready to serve..

Vegetable Pulao

Ingredients
Basmati Rice-1 cup Water-1 3/4 cup Salt- Cardamom-1 Cloves-2 Cinnamon-1 Onion-1/2 Ginger Garlic Green Chilli Paste-1 tsp Vegetables-1/2 cup Oil/Butter-2 tbsp Method Wash and soak rice for 30 minutes .Then drain and keep aside.Heat Oil or butter in a pressure cooker .Add whole masalas and saute for a minute .Now add ginger garlic green chilli paste and saute ..Then add onion and saute till translucent .Add vegetables and saute .Now add rice and saute for 2 minutes .Then add hot water and salt ..Mix well .. Allow to boil and close the cooker and cook for 1 whistle .Then keep aside and open after 15 minutes .So tasty easy vegetable pulao is ready to serve ...

Ari Payasam

Ingredients
Unakkalari /Payasam Rice-1 cup Jaggery-6 (increase or decrease) Salt-one pinch Grated coconut-2 tbsp Water-3 1/2 cup Cardamom-3-4 Ghee-1 tbsp Tulsi - Method
Soak rice for 20 minutes..Then wash well ..Take a cooker and pressure cook the rice by adding water for 2 whistle in medium flame .Boil jaggery in water and strain well..When the rice is well cooked ,add jaggery and mix well..Add salt and grated coconut and mix..Now cook for 5 minutes stirring continuously ..Finally add ghee and Tulsi ..Check the taste. So the tasty payasam is ready to serve ..

Vegetable Manchurian

Ingredients
Carrot -1 Cabbage -1 cup Spring onion -2 tsp Garlic - Ginger -1 tsp Green chilli-2 Salt- Chilli Powder -1/2 tsp Corn flour -3 tbsp Maida -2 tbsp Oil - for frying For Gravy Oil -2 tbsp Ginger -1/2 tsp Garlic -2 tsp Green chilli -2 Ketchup - 2 tbsp Soya sauce -1-2 tbsp Salt- Sugar -1/2 tsp Vinegar -1/2 tsp Pepper powder -1/4 tsp Chilli powder -1/4 tsp (opt) Cornflour mix - Hot Water -2 cup Sesame oil -1/2 tsp (opt) Method Finely chop the vegetables ..To that add ginger garlic green chilli spring onion salt chilli powder and mix well ..close and leave for few minutes ..Then to that add maida and cornflour mix well..make balls and fry them well ..Heat oil in a kadai ,add ginger garlic and chilli saute for few minutes ..Then lower the flame and chilli powder ,mix well.Now add tomato ketchup and Soya sauce ..mix ..Now add water and stir well ..to that add vinegar ,sugar ,salt and pepper powder ..allow to boil ..Then to that add fried veg balls and cook for 3-4 minutes ..Now add cornflour mix and stir well and cook ..Finally add spring onion ,ginger and sesame oil .. So the tasty veg Manchurian is ready to serve ..

Egg Fried Rice

Ingredients

Egg - 3 or 4 Pepper Powder -1/2 tsp Salt - Oil -2 tbsp

Method

Add pepper powder and salt to the egg and mix well..Heat oil and add egg and scramble ..Keep aside .Heat oil in a kadai ,
add garlic ,ginger ,spring onion ,green chilli ,salt and stir well in high flame ..Add vegetables and saute ..Now add soya sauce ,chilli paste ,sugar ,mix well .. Then add white vinegar and mix
..Then add cooked rice and toss well ..Now add egg d mix ..
Check the taste and adjust ..Finally add spring onion greens and sesame oil ..So the tasty Egg fried rice is ready to serve..

Pavakka Mezhukkupuratti(Bitter Gourd Stir Fry)

Bitter gourd -2 Onion-1 Green chilli-2 Shallots-10 Crushed chilli-1 1/2tsp Salt Coconut Oil-2tbsp Curry leaves- Tamarind water -

Method

Clean and chop bitter gourd into thin pieces.Keep them in tamarind water for 20 minutes .Wash and drain them ..Heat oil and add onion ,curry leaves and green chilli.Add salt .Saute for 1 minute.Then add small onion and saute till translucent.Then add crushed chilli and saute till raw smell goes.Now add bitter gourd and mix well..Close the kadai and cook for 10 minutes in medium flame stirring occasionally.Then open the kadai and roast the dish till crisp ..If u want u can add little tamarind juice or lemon juice and small piece of jaggery also ..So the tasty bitter gourd stir fry is ready to serve ..

Ingredients


Green Gram-1 cup Small onion-10 or Onion -1 small chopped Crushed chilli flakes-2 tsp Curry leaves-2 string Garlic-1-2 Coconut Oil-3 tbsp Coconut grated-3 tbsp Green Chilli-2 Salt- Water-1 -1 1/4 cup

Method

Soak green gram over night ..Wash well …Cook for 2 whistle in medium flame by adding water and salt..Crush onion-chilli flakes and garlic ..Heat oil in a kadai ..Add crushed mix along with green chilli slits and curry leaves ..Saute till the raw smell goes ..Then add coconut and mix well and saute for 1 minutes ..Then add cooked gram and mash with the back of the spoon ..Mix well..Check the taste and adjust ..Cook for few minutes till we get a thick consistency ..Finally sprinkle coconut oil and curry leaves ..Close for 10 minutes and then serve ..Our tasty cherupayar kuthikachiyathu is ready to serve..

Thakkali Chutney

Thakkali Chutney


Ingredients 



Onion-2 medium(sliced) 
Dry Red chilly(vattal mulaku)-4
Tomato-4(chopped) 
Salt - to taste 
Ginger-very small piece
Curry leaves-1string 
Coconut oil-5tsp 



Method 


Heat 2tbsp of oil in a pan and fry red chilly.Keep them aside . In the same oil saute onion,ginger and curry leaves till it become translucent.Keep that also aside . Now saute chopped tomato .Cook in a low flame by closing the pan for few minutes .When done allow the cooked tomato to reach room temperature . .. If possible remove the skin from them . When cool grind the red chilly,tomato ,salt and onion mix together to a fine paste.. In the same pan heat 1 tsp of oil and saute this paste for 3 minutes (opt).So the tasty tomato chutney is ready to serve ..Serve with dosa,idly etc ..

Fried Rice

Fried Rice


Ingredients

Basmati rice-1 cup Garlic-2 tsp Spring onion white -2 tsp Spring onion green -1 tsp Capsicum-2 tbsp Carrot-2 tbsp Cabbage-3 tbsp pepper powder-1/4 tsp Salt-to taste Soya sauce-1 tbsp Sugar-1/4 tsp Sesame Oil-1 tsp Oil-2 tbsp

Method

Wash the rice well and soak it for 20 minutes ..Boil water and cook the rice until done ..Drain and allow to cool .. Then keep it in the fridge for at least 2 hours ..Finely chop all the vegetables, garlic,spring onion,…Now heat oil in a heavy bottomed kadai ,and add garlic.Saute for few seconds ,then add spring onion d capsicum ..Saute for another few seconds ..Finally add the cooked rice ..Mix and stir well… Cook for 5 minutes …Taste it and add salt and soya sauce if needed..Finally sprinkle 1 tsp of sesame oil and mix well..Garnish with spring onion …Easy and tasty restaurant style fried rice is ready in few minutes ..

Ingredients

Chicken -3/4 kg Dry red chilli-10 or according to your spice level Garlic -1 pod Small onion -300 gm (30-35) Coconut slices -of 1/2 Salt Oil -3tbsp Mustard seeds -1/2 tsp Urad dal -1/2 tsp Curry leaves - Turmeric Powder-1/4 tsp

Method

Heat oil in a kadai splutter mustard seeds followed by urad dal and curry leaves . Now add chili and saute till raw smell goes Now add shallots , garlic and salt ..Saute till light brown shade .Then add turmeric powder saute for 2 minutes ,then add coconut pieces and mix well..Finally add chicken and mix well ,cook for 5 minutes .Now close the kadai and cook (add water if needed )When the chicken is well cooked , open the kadai and roast more .check the taste and adjust acordingly.Finally sprinkle some coconut oil and curryleaves .. So the tasty easy spicy chicken pallipalayam is ready to serve ..
